Christopher Bothwell had a problem. As Head Sommelier of the three Michelin starred Alain Ducasse at the Dorchester, arguably London’s best restaurant, he had nothing to serve guests who weren’t drinking. If half the table was drinking first growth Bordeaux, he couldn't really serve everyone else orange juice. It’s just not going to fly.
And with that, an idea was born. When you run a multi-million dollar cellar you know better than to try and create a non alcoholic wine to match them. Instead, Chris got a bit punk. Why not create non alcoholic spirits - spirits that that could be used to create amazing cocktails to match every dish in a three Michelin starred dining experience? To do it Chris and his co-founders threw away the rule book.
